Brothers Hector and Pablo Durigutti founded Durigutti Family Winemakers in 2002. (If the name Durigutti is familiar, it’s because they come from a large winemaking family.) They purchased their main vineyard in Las Compuertas (Luján de Cuyo) in 2008, but fruit for this Cara Sucia is from Rivadavia, a town 30 miles SE of the city of Mendoza, where the brothers were born and raised. 80 year old vines help explain the depth of flavor. Fermention and aging in concrete eggs give it a thicker mouthfeel. Tangy red cherry, red raspberry, balsamic, earth. Italian Sangiovese drinkers would like Cara Sucia.
Tomaticán (Tomato & Steak Sauté)
makes 4 small plate portions or 2 entrees, perhaps served with a salad
Ingredients
-- 1 lb top sirloin, cut into 2-inch strips
-- 2 tbsp vegetable oil
-- 1 yellow onion, cut in half, then thinly sliced
-- 1 cup yellow corn kernels (either fresh or frozen)
-- 3 tomatoes, cut in wedges
-- ½ tsp ground cumin
-- salt & pepper to taste
Instructions
Season the meat with salt & pepper.
In a medium skillet, heat 1 tbsp oil over medium-high heat. Add the meat and cook it undisturbed for 2 minutes, flip the pieces over, cook for another 2 minutes. Remove meat from skillet, set aside.
In the same skillet, heat 1 tbsp oil, add onion, sautéing, stirring occasionally until tender.
Add the corn, tomatoes, cumin, salt & pepper, cook for 5 minutes.
Add the meat, cook for 2 minutes. Add more salt & pepper if needed.
