Mary Taylor is an American that partners with European grower-producers that make wines true to their appellations, while practicing organic and biodynamic viticulture. In this case, the grower-producer is Nathalie Larroque. Nathalie’s family’s winery is Mas d’Oustry, which has been in the family since 1540. Gaillac (“Guy-Ack“) is the 2nd oldest vineyard in France. The Grand Crus of Ancient Gaul were planted here. The wine is called Perlé because of the tiny bubbles, due to it being chilled during fermentation. Mauzac (better known from Limoux) and Muscadelle (better known from Bordeaux) are fermented separately, then blended. The resulting blend is thicker and more complex than expected, with notes of lemon, green apple, underripe peach, dried honey, dried herbs and minerality. The tiny bubbles add zest to the experience.

This old world blend is simply sensational with as crab and cannellini bean salad drizzled with citrus vinaigrette, crab cakes with blood orange cream sauce, fava bean hummus, and Waldorf chicken salad stuffed croissants. Creamy lobster risotto, ahi poke with quinoa and heirloom tomatoes, citrus spiced fried chicken wings. Pair a glass with dreamy Tete de Moine, creamy Camembert, Halloumi or Brillat‐Savarin drizzled with a touch of honey.
