The Soldati family founded La Scolca in 1919, and Chiara Soldati (the 4th generation) is now in charge. They are credited with reviving the Cortese variety from near obscuirity after WWII. They noticed that the Piemontese vineyards that grew the grape had very similar soil conditions (aka chalk and limestone) to Chablis in Burgundy—and in truth, the wine has some similarities, especially around the nervous-edge of acidity which rides both wines. La Scolca translates to “Looking far away“ in the local dialect, which is apt for this forward thinking family. The fruit comes from vineyards in Rovereto, the most prestigious part of Gavi. White peach, green apple, and bright lemon citrus. Aged in stainless steel.

Enjoy this refreshing white as an aperitif or paired with Italian hors d'oeuvres like fried ravioli, prosciutto topped crostini, classic Caprese salad drizzled with olive oil and balsamic vinegar, crispy arancini and flash fried calamari. This food friendly white is also delicious served alongside pasta primavera, seafood risotto, herb grilled halibut and seasonal veggies drizzled with olive oil, spaghetti carbonara, chicken thighs braised in white wine, pesto tossed gnocchi and shrimp linguine smothered in a creamy citrus sauce. Or simply savor this with soft cheeses like herbed Boursin, fresh goat cheese and Burrata drizzled with olive oil and herbs.
