Domaine Notre Dame des Paillieres is a 4th generation family owned winery founded in 1935 in Gigondas. Among their wines is this Côtes du Rhône Villages Sablet, a designation above a normal Côtes du Rhône. There are about 20 CdR Village appellations in the Rhône Valley. Sablet is just north of Gigondas, with similar terroir. The Grenache is from clay lime hillsides above the village; the Syrah from sand lime soil just outside the village. The varieties are vinified separately, blended, bottled, then rested. Aged in stainless steel and concrete. Tangy blackberry, red raspberry, violet, anise, hint of leather.

This velvety blend also pairs beautifully with strong cheeses like sharp cheddar, aged Gouda, Reblochon and Le Moulis.
