4JUN11 Decoy CABERNET SAUVIGNON, California 2021
4 and 6 bottle levels $23 (member price $20)
90% Cabernet Sauvignon, 10% Merlot 13.9% ABV
Decoy was founded in 1985 as a project of Duckhorn Vineyards. At first the fruit was from their Napa estate vineyards, then they branched out to Sonoma. When I see the labels, I’m reminded of my late maternal grandmother who collected duck decoys and had pillows with duck decoy motifs on every couch and easy chair in their home. This current vintage Cab Sauv is California appellated. I’m told that most of the fruit is from North Coast, with a small portion from Paso Robles. Aged 18 months in 100% French oak barrels 40% new, 60% neutral. Blackberry, blueberry, mocha, vanilla, cinnamon. This is an easy drinking Cab perfect for a burger, but not bold enough for a grilled ribeye.
Food Pairing Suggestions:
This lush red is simply decadent with juicy steak au poivre, cabernet braised short ribs, rustic Osso Bucco, slow cooked beef cheeks in red wine, grilled bone‐n petite filet topped with blue cheese butter, bacon‐ topped burgers smothered in sharp Cheddar and even lasagna bolognese or a wood fired pizza topped with Italian sausage, bacon and ham. After dinner, savor a glass with a sliver of Gruyere, Comte, aged Gouda, Pecorino, Manchego or Cheddar.
