Tempranillo Blanc is a mutation of Tempranillo, discovered about 30 years ago in Rioja, and since 2007 has been allowed to be in wines labeled Rioja DOC. Very little is planted, even less exported. Rioja winemakers are still learning its potential. (Almost all Rioja Blanco is made from Viura, but Tempranillo Blanco has been gaining acreage.) Nivarius is a Latin term for a natural well where snow is kept year-round, because of the elevation (2200+ feet) of their vineyards. The family made their fortune in sausage production, and used their money and connections to found the winery in 2012. Aged in neutral French oak and stainless steel. Yellow peach, nectarine, golden apple, spice. This is a highly aromatic wine that would be welcome at a Fourth of July holiday table.

Enjoy this aromatic white with starters like lemon herb prawns served with crusty garlic bread, tangy gazpacho, crispy chicken croquettes and a mixed green salad tossed with lemon vinaigrette or seafood Paella, seared tuna and roasted potatoes with Romesco sauce, Thai fish curry over white rice, seafood risotto and fresh lobster tails drizzled with lemon. Or simply enjoy a glass with soft Spanish cheeses like Nata de Cantabria cream, Marjorera goat and Torta de Casar, preferably accompanied by salty slices of Serrano ham and Marcona almonds.
