Domaine Notre Dame des Paillières is a 4th generation family owned winery founded in 1935 in Gigondas. Paillières is also the name of springs on the estate which were thought to be effective against the plague in the Middle Ages. Gigondas is considered the 2nd most famious appellation in Southern Rhone (after Châteauneuf-du-Pape), and Les Mourres is a lieu dit within Gigondas. Aged in concete tanks. This is an unusual wine, in that it’s highly aromatic and the tannins are crunchy, but the wine is full-bodied. Red cherry, red raspberry, black plum, black pepper. Consider popping a bottle at Thanksgiving.

Enjoy this full-bodied Rhone blend with beef brisket and four cheese macaroni, venison tenderloin, roast leg of lamb with mint pesto couscous, pot roast with root veggies, grilled pork chops with a basil garlic rub, slow cooked rabbit stew, black bean burgers topped with goat cheese, caramelized onion and sausage flatbread, grilled ribeye with salsa verde, coffee braised short ribs over aged cheddar potatoes, espresso rubbed rib eyes over creamy mushroom polenta, hanger steak with roasted beet salad and smoked duck rillettes. This velvety blend also pairs beautifully with strong cheeses like sharp cheddar, aged Gouda, Reblochon and Le Moulis.
