Albariño from Rias Baixas has only improved in the last decade, thanks to better viticulture, older vines and international exposure/investment. Winemakers have been able to coax a lot of flavor out of these wines of modest ABV. Abadía de San Campio is a label of Terras Gauda, a winery based in Valle de O Rosal, which is in the southwest tip of Rias Baixas, near the Atlantic and just across the Minho River from Portugal. Because of the proximity to the Atlantic, there is a saline element to the wine. Ripe & rich attack of white peach, nectarine and white flowers, finishes with tart minerality. Aged in stainless steel.

This tangy white is refreshing with lighter dishes like crispy cod drizzled with lemon and capers, barbecued oysters, angel hair pasta lightly tossed in a clammy broth, smoked paprika crusted cod filet with crispy potatoes, roasted eggplant stacks and other seasonal veggies, classic Spanish Paella, grilled chicken stuffed with goat cheese and herbs served over vegetable rice, and all your raw bar favorites. Or simply enjoy it with soft Spanish cheeses like Nata de Cantabria cream, Marjorera goat and Torta de Casar, preferably accompanied by salty slices of Serrano ham and Marcona almonds.
