Iron + Sand is named for Iron Spring and Sand Spring – two springs that provided water that propelled Paso’s growth in the 19th century. The fruit is from Estrella River Ranch Vineyard (San Miguel – northernmost sub AVA) and Parrish Templeton Vineyard (El Pomar – south of the city of Paso Robles). One year in neutral French oak, notes of tangy black plum, juicy black raspberry, semi-sweet dark chocolate, cassis. This is a smooth wine. Tannins are present, but modest. Great with roasted filet mignon, but not big enough for grilled ribeyes. Blackberry, black cherry, dark chocolate, Aged in neutral French oak barrels.
Food Pairing Suggestions:
This plush red is simply decadent with juicy steak au poivre, cabernet braised short ribs, rustic Osso Bucco, slow cooked beef cheeks in red wine, grilled bone-in petite filet topped with blue cheese butter, bacon-topped burgers smothered in sharp Cheddar and even lasagna bolognese or a wood fired pizza topped with Italian sausage, bacon and ham. After dinner, savor a glass of this velvety cabernet with a sliver of Gruyere, Comté, aged Gouda, Pecorino, Manchego or aged Cheddar.
