Monastrell (or Mourvèdre as the French call it) is a thick skinned grape that often provides oomph to Châteauneuf du Pape and Côtes du Rhône. Finca Bacara, founded in 2016, is among the wave of modern Jumilla wines, with a primary mission of championing the Monastrell grape. This is a warm region, allowing the grapes to fully ripen, and the resulting wines are full-bodied. “Time Waits for No One Double” is different. The name of the wine is philosophical, urging us that time is precious, and not to waste it. While full-bodied, it isn’t quite as voluptuous as other Jumilla wines, and has a touch of chalky minerality on the finish. Boysenberry, black raspberry, Valrhona chocolate, anise. Six months in American oak barrels (mostly neutral).

Pair this Spaniard with wild boar ragout tagliatelle, rabbit cacciatore, spaghetti piled high with meatballs and shaved Pecorino, bison burgers smothered with blue cheese, perfectly seared duck breast with blackberry port reduction, sticky barbecue ribs, pulled chicken barbecue tossed with Alabama white sauce, Mozzarella and herb stuffed eggplant, herbed pork roast with root vegetables, or lamb and pea stew.
