4APR10 Castel Firmian “Rubino” TEROLDEGO, Alto Adige, Italy 2020 (O)
4 and 6 bottle levels $22 (member price $19)
100% Teroldegeo 12.5% ABV
Teroldego as a variety produces deeply pigmented, spicy wines. Winemakers in Tuscany, Veneto and Sicily may add a small amount of Teroldego to their blends – for the color and spice, but there’s only one DOC for varietal Teroldego: Teroldego Rotaliano. It’s a plain with gravel-rich soil. These wines range from light-bodied to full-bodied in style, depending on yield and the optional use of oak aging. Rubino sees 12 months of neutral Slovenian oak. The attack is ripe and juicy, with black raspberry, blueberry and blackberry. The wine finishes with mostly earth and mineral notes.
Food Pairing Suggestions:
Enjoy this velvety red with smoky spaghetti carbonara; traditional Osso Buco served over creamy risotto Milanese; hearty lasagna or spaghetti Bolognese; wood fired Italian sausage pizza; burgers topped with Applewood smoked bacon and melted Tallegio; veal Marsala served over buttery egg noddles; Italian style braised rabbit over mushroom polenta; garlic-crusted pork tenderloin served with crushed Italian parsley potatoes; and creamy smoked salmon pasta. This versatile red also pairs with a wide range of cheeses from Italian favorites like Tallegio, Robiola and Gorgonzola to fancy French chèvre such as Cabriflore or triple cream cow’s milk St. Andre.
