Villa Matilde Avallone is a 2nd generation family winery, founded in the 1960’s. It’s located about an hour north of Naples, surrounded by three volcanic mountains to the north, east and south, and open to the sea to the west. Think of Aglianico as “Cabernet Sauvignon wearing Nebbiolo cologne”. It’s Campania’s iconic red wine, thriving in the volcanic calcareous soil of the region. Aglianico often sees significant oak aging. In this case, it’s aged in stainless steel. Blackberry, black raspberry, touch of Italian earthiness. Concerning the recipe below, I enjoy a similar version a few times a year at a local Neopolitan restaurant, served with potato wedges and broccoli rabe.
