4OCT09 Paso 46 CABERNET SAUVIGNON, Paso Robles, California 2020
4 an4 and 6 bottle levels $21 (member price $18)
Cabernet Sauvignon, etc 14.3% ABV
Paso 46 is a project of Broken Earth, a winery that produces plenty of $50 - $80 reds. Their base is Continental Vineyards, a 2500 acre parcel that was originally named Rancho Tierra Rejada (Land of Worked Earth), east of the town of Paso Robles. Paso 46 is a reference to Highway 46, an east-west road that’s crucial to the area; in fact, Continental Vineyards is located on Highway 46. In the varietal breakdown above, I mention “Cabernet Sauvignon, etc”. Technical details are sparse, but Paso 46 tastes like it includes some Petite Sirah and Syrah. This wine was aged in French oak barrels (mostly neutral). Ripe & rich blackberry, boysenberry, molasses, mocha.
Food Pairing Suggestions:
Savor this rich, balanced red with Cabernet braised beef cheeks served over airy whipped potatoes and roasted root vegetables; steak au poivre with garlicky braised spinach; braised short rib sliders topped with caramelized onions, aged Gouda and smoked aioli; rustic Osso Bucco served over creamy Gorgonzola risotto; bacon and aged Cheddar topped bison burgers with sweet potato fries; slow cooked beef cheeks in red wine; grilled bone-in petite filet topped with blue cheese butter; wood fired pizza topped with Italian sausage, bacon and ham; and lasagna Bolognese. This soft red also pairs perfectly with Gruyere, Comté, aged Gouda, Pecorino, Manchego or aged Cheddar.
