Slavček (Slahv-sec) was founded in 1769 and is still owned by the Vodopivec family. Their 25 acres of vineyards are located about 10 miles east of Friuli, in Vipava Valley, an area of marl soil and impacted by the nearby Adriatic. The current generation (Franc and wife Alenka) inherited a winery and vineyards in disrepair but they went to work in the 1970’s to bring it into the modern era and instituted organic viticulture in the 1990’s. Pinot Grigio has a reputation for “eh” wines, but Sivi has rich and vibrant flavors of pear, tropical fruit and citrus. Fermented in used Slovenian oak and stainless steel. Aged in oak and acacia barrels made from trees on their property! Sivi is the name of a local rare bird.

Pair this versatile, elegant white with seasonal appetizers such as cucumber slices topped with sesame-soy grilled shrimp and avocado; artichoke and asparagus salad drizzled with Meyer lemon vinaigrette; fresh mozzarella and basil on caprese toasts; fried oysters with Garlic aïoli; sushi and spring rolls; and wonton nachos with habanero salsa. This food friendly white is also refreshing with summer staples like tomato, burrata and basil antipasto drizzled with tangy balsamic; mahimahi tacos with cilantro and mango-poblano salsa; pan-seared grouper in a lemony mojo sauce; grilled red snapper doused in soy ginger sauce; and olive oil-rubbed grilled chicken with lemon, sage, garlic, and rosemary.
