Birk O’Halloran spent years tinkering with his Vermouths before debuting Rockwell Vermouth. Vermouth has been dominated by Italy, France and Spain for decades, but producers in the U.S. are catching up. Thiis is a fortified aromatized wine, perfect for cocktails, on the rocks or neat. UD David developed a clone specifically for Rockwell; to that is added about one third Orange Muscat for aromatics. His caramelized sugar is from North Carolina, sun-dried California Mission Figs are used, Artemisia Californica herbs are foraged from Carmel Valley, along with Yerba Sante and Quassia Amara herbs. Birk is proud that everything (except the caramelized sugar and agave nectar) is from California. A portion of the base wine was fermented on the skins, and aged for 18 months in French oak barrels. The resulting wine is very complex, with notes of candied ginger, grapefruit, gooseberry, baked golden apple and toasted almonds. The bitter notes are balanced by the sweetness from the caramelized sugar and agave nectar.
