Ted and Mari Gerber bought acreage in remote Illinois Valley (Rogue Valley in Southern Oregon) in 1971, then planted grapevines in 1974, including one of the oldest Gewürztraminer vineyards in Oregon. The elevation of the vineyard is 1500 feet, making them Oregon’s highest altitude producer. They specialize in Alsatian varietals. (Yes, Pinot Noir is an Alsatian varietal.) Along with his second wife Terri and daughter Alicia, Mr. Gerber still runs Foris Vineyards. In 1989, Ted planted eight acres of Dijon Clone Pinot Noir and Chardonnay, then sold many of the vines to wineries in California, helping to establish the Dijon clone in the U.S. Aged in stainless steel. This delicate, yet seductive rosé pairs perfectly with seasonal fruit salad; yellow beet salad with goat cheese and roasted pistachios drizzled with pistachio oil and course sea salt; baby lettuces with Feta, strawberries and slivered almonds; grilled cheese and sun-dried tomato panino; asparagus, prosciutto and Fontina tartine; ham, leek and gouda soufflé; mushroom and gruyere quiche; rosemary flatbread topped with Gorgonzola, roasted grapes and drizzled honey; crisp tomato, zucchini and eggplant bread gratin; and pasta primavera.
