Babylonstoren is Dutch for Tower of Babel, this werf (homestead) is a circa 17th century, restored and working farm, replete with a winery, spa, hotel, several restaurants, 8-acre formal garden and 3 event venues. Located between the Franschhoek and Paarl regions, one can tour the vineyards, dine farm-to-table and finish with a honey & salt scrub. So, at least Babylon won't be burning with anxiety! This wine is a classic RSA Chenin. 10% was aged in cement eggs and terracotta clay amphorae. White peach, pineapple, lemon. With 2.2 gr/liter RS, it has the meerest hint of sweetness. This tangy white is the perfect companion to first course dishes such as crisp fritto misto, freshly shucked oysters with mignonette sauce, ricotta and tomato topped bruschetta and white bean soup drizzled with truffle oil and just as effortlessly stands up to main course dishes like Italian-style fish stew, Cioppino with crusty sourdough, chicken and spinach ravioli with cream sauce, potato gnocchi tossed with garlicky pesto, spaghetti alle vongole, seabass topped with salsa verde, asparagus frittata, lobster risotto and vitello tonnato with grilled vegetables and fresh olive oil.
