Greenwing is a project of Duckhorn, meant to explore the terroir of Columbia Valley. Their inaugural vintage was 2017, but it’s only been available in the ATL for a few years. There’s not much info available about this Cab, but it’s smooth enough to drink by itself, and has the oomph to pair with a grilled steak. Canvasback (another Duckhorn Columbia Valley label) is more established, and I assume Greenwing shares resources with Canvasback to bring tasty wines to the market at fair prices. Serve this balanced, silky red with a caramelized onion and blue cheese tart, pan seared steak with cabernet sauce, grilled ribeye topped with blue cheese and chive butter, seared duck breast with duck fat fried potatoes, grilled tuna steaks with romesco sauce and paprika roasted potatoes, marinated flank steak served medium rare with Gorgonzola and prosciutto risotto, herbed pork chops and lamb lollipops with mint aioli. After dinner, enjoy a glass of this delicious red with semi-hard aged cheeses such as Cheddar, Beemster 18 Month Aged Gouda, Ossau-Iraty, San Andreas and Ewenique.
