70% Chardonnay, 30% Muscat 12.5% ABV
I had to laugh when I saw the label for Pet Bat, because I featured a bat drawing for one of February’s wines…lol. Pet Bat is a Pet Nat (aka Pétillant Naturel), a sparkler that sees one fermentation in the bottle. Hand harvested fruit was sourced from a 30 year old single vineyard (Hawkesbury) in the Southern Valleys of Marlborough. Grapes were gently pressed and co-fermented ‘wild’ in seasoned French barriques at ambient temperatures with high solids. At roughly 10 g/l residual sugar the wine was bottled to capture natural effervescence. Harmless yeast sediment remains in the bottle as a consequence. White peach, honeydew melon, brioche

This uniquely versatile sparkler is anything but ordinary! Serve with a wide variety of appetizers ranging from toasted Marcona almonds drizzled with honey and marinated olives to crispy fried calamari, crispy chicken empanadas, smoked salmon potato gallettes, grilled sausage skewers, ham and Manchego panini smeared with tomato jam, hand-rolled sushi, beer battered cod and chicken mushroom potpies. Or simply enjoy these bubbles with a sliver of dreamy cheeses like Brie, Camembert, Brin D’Amour, Emmental, Reblochon or Saint-Nectaire.
