Pavette (little peacock) is a project of a former Banshee winemaker. Because of his Banshee connections, he was able to source fruit from California’s premier cool climate appellations. The Zinfandel and Cabernet Sauvignon are from Lodi; the Petite Sirah from Calaveras County. The Zinfandel and Petite Sirah are co-fermented, with the Cab blended in later. Aged in neutral oak barrels and stainless steel. Blackberry, blueberry, black raspberry, cinnamon. This is a cheerful chuggable red … not fancy, but crowd pleasing. Pour it for the gang the next time you’re grilling burgers on the back deck!
