Moulin-à-Vent (along with Morgon) are the two Cru’s producing the richest, most structured wines of the Beaujolais region. One of the secrets is the soil, which has veins of Manganese, a mineral that is toxic to grapevines, and results in sickly vines that struggle to produce small clusters of tiny fruit, so there’s a higher ration of skin to flesh than in the other Cru’s. Bruno Copéret is the 5th generation to farm this family owned hillside vineyard. Half the grapes were fermented in whole clusters. Partially aged in neutral oak. Maraschino cherry, blackberry, potpourri. While Thanksgiving is an obvious time to pop a bottle with family and friends, it has enough structure to pair with hearty cold weather stews.

Or simply pour a glass with soft-rind cheeses like Brie de Meaux, Camembert or Chaource and air-dried ham, saucisson or a terrine compagnarde.
