Albert Bichot is one of Burgundy’s leading negociants, and owns a string of Domaines throughout the region and Beaujolais. They produce everything from Bourgognes to Grand Cru wines. Horizon de Bichot is labeled Vin de France, but the fruit is from Limoux, the preeminent appellation for sparkling wine in the South of France. This makes sense, as Crémant de Limoux has become synonymous with high quality sparkling at great prices, and we’ve featured a number of Crémant de Limoux’s over the years in club. Limestone soil, high elevation and windy conditions help explain why Pinot Noir and Chardonnay thrive here, despite temperatures warmer than Burgundy. Tart cherry, raspberry, blackberry, menthol, whiff of salinity. Aged in stainless steel.
Food Pairing Suggestions:
This seductively silky red blend with a hint of earthiness pairs beautifully with regional dishes such as classic boeuf Provencal, duck cassoulet and beef burgundy. Up your dinner party game by serving this red with roasted leg of lamb with mint pesto, herb-encrusted roasted pork tenderloin with root vegetables, stuffed beef braciole with red wine risotto, saucy venison stew and beef stir fry with white rice and vegetables. You might as well pick up a second bottle for the cheese course and serve it up with warm truffle oil drizzled Brie, aged Cheddar, Roquefort, and charcuterie.
