6FEB13 Cantina Fina “Caro Maestro” RED BLEND, Sicily, Italy 2018
6 bottle level $32 (member price $28)
Cabernet Sauvignon, Merlot, Petit Verdot 14.0% ABV
Vino Venue is leading a trip to Sicily in October, and Cantina Fina is on the tentative itinerary. They are in Western Sicily, not far from Marsala and Trapani. Founded in 2005 by Bruno Fina, the entire Fina family works there, including the charming Kika who visited VV in October. While they are close to the coast, the elevation of their vineyards is 1000-1500 feet above sea level, and their vineyards are north facing, minimizing the sun’s impact on the fruit. Cantina Fina’s consulting enologist was the late Giocomo Tachis, known as the Father of the Super Tuscans for producing Sassicaia, Tignanello and Solaia with the Antinori family. Caro Maestro (Dear Teacher) is the Fina’s tribute to Mr. Tachis. Aged 24 months in French barriques. Blackberry, black raspberry, cola, graphite, spicebox
Food Pairing Suggestions:
This Super Sicilian pairs beautifully with Italian-style beef braised in tomatoes and red wine, pasta bolognese, hearty beef and Italian sausage lasagna, veal involtini alla napoletana, smoky eggplant parmigiana, braised lamb shank "Osso Buco”, juicy bistecca Fiorentina, spaghetti alla Carbonara, roasted wild boar over saffron polenta, chicken marsala or cheesy ravioli with wild mushrooms. And for a “perfetto” cheese pairing, serve a glass of this Italian stallion with a platter of salumi, Parmesan, Pecorino, Fontina and even fresh Buffalo Mozzarella drizzled with pesto.
